BREAKFAST BURRITO |

4 10" Los Amigos
Flour Tortillas
4 Eggs Beaten
1 Small Onion
1 Small Tomato
Chopped
1 Jalapeño Chopped |
1/2 Grated Mild
Cheddar
or Monterey Jack
Cheese.
Salt and Pepper to
taste.
One tablespoon of
margarine
or salad oil.
2 cups or diced,
precooked
vegetables such as:
Green beans
Zucchini
Green peppers |

1. Heat margarine or
salad oil in frying
pan.
2. Stir in all
vegetables and stir
fry for about 3 mins.
on medium heat.
3. Add eggs and
scramble mixture
till almost dry.
4. Divide mixture
into Los Amigos
Flour Tortillas.
Sprinkle with grated
cheese and roll up. |

BUÑUELOS |
|
6 10" Los Amigos
Flour Tortillas or
12 6" Los Amigos
Flour Tortillas
2" vegetable oil in
a small saucepan |
1/2 Cup granulated
sugar
1 Tablespoon
cinnamon |
|
1. Cut tortillas
into wedges.
2. Fry tortilla
wedges in hot oil
till crisp and
golden.
3. Drain on paper
towels.
4. Mix cinnamon and
sugar together and
sprinkle mixture on
fried tortillas. |

MEXICAN PIZZA |
|
1 10" Los Amigos
Flour Tortilla
1/2 - 3/4 cup of
grated cheddar or
Jack Cheese
Cooked Italian
sausage slices
Grated parmesan
cheese |
1 fresh tomato,
chopped
Diced green pepper
Cooked ground beef
Suggested toppings:
Chopped green
chilies
Black olive slices
Pepperoni |

1. Pre-bake tortilla
about 5 mins. in
375° oven. Place on
pizza pan.
2. Sprinkle tortilla
with Cheddar or Jack
cheese.
3. Put whatever
toppings you desire:
Meat, chilies,
tomatoes, olives,
etc. Sprinkle
parmesan cheese over
top.
4. Bake 375° about 5
mins. till cheese
melts.
5. Slice in wedges. |

QUESADILLAS |
|
2 10" Los Amigos
Flour Tortillas
1/3 · 3/4 Cup of
grated mild cheddar
cheese. |
Battle of liquid
margarine
2 Slices of ham or 4
slices of cooked
bacon. |
|
1. Heat large frying
pan or griddle.
Squirt small amount
of margarine into
pan.
2. Place one Los
Amigos tortilla in
pan and sprinkle
with cheese. Place
another bacon or ham
on cheese. Top with
the other tortilla.
3. When golden and
puffy on bottom,
squirt a little
margarine on top and
flip tortilla and
fry other side till
golden.
4. Slide out and cut
into wedges like a
pizza.
5. Serve
immediately. |

BAKED DESSERT
BURRITOS |

YIELD 10
10 10" Los Amigos
Flour Tortillas
1 Can apple pie
filling
1 Jar strawberry or
raspberry preserves. |
Oven 400°
Melted or liquid
margarine
2 Tbs. cinnamon
mixed with 3 Tbs.
sugar. |
|
1. Preheat oven to
400°
2. Trim 2" off each
tortilla with
scissors. Save
trimmings for
buñuelos. They may
be frozen for letter
use, if desired.
3. Spread about 1
tsp. on center of
each 8" tortilla.
Place a heaping tsp.
of pie filling over
preserves. Fold up
as an envelope as
shown on package and
place each side down
on buttered baking
dish.
4. Generously put
melted margarine
over tops of
burritos. Sprinkle
with cinnamon
sugar. Bake 10
minutes. |

TAQUITOS |
|
12 Los Amigos Corn
Tortillas Oil for
frying |
Shredded beef or
chicken |
|
1. Soften Los Amigos
tortillas in hot
oil.
2. Roil beef or
chicken tightly in
tortilla like a
cigar and use
toothpick to close.
3. Fry rolled
tortillas till crisp
in oil.
4. Serve with
guacamole. |

OPEN FACE TACOS |
|
1 7oz. bag Los Amigos Tortilla Chips
1 Lb. lean ground beef
1 Package of Taco Seasoning Mix
1 Cup of Water
1 Avocado, thinly sliced
2 Cups of grated mild cheddar cheese (8 oz.)
|
2 Medium tomatoes, chopped
1/3 cups of sour cream
|
|
1. Cook and crumble beef till browned. Drain and discard droppings.
2. Stir in Taco Mix and water. Bring to a boil. Simmer 10-15 minutes, stirring occasionally
3. Arrange single layer of Los Amigos Tortilla Chips on un-greased baking sheet. Place oven rack 5" to 8" from broiler.
4. Spoon 2 tablespoons of meat mixture on each chip. Sprinkle cheese evenly over chips. Place under broiler till bubbly.
5. Garnish with 2 pieces of tomatoes and 1 slice avocado. Top with sour cream. |

CHEESE ENCHILADAS |
|
6 Los Amigos Corn Tortillas
1 10 oz. can enchilada sauce
1 8 oz. can tomato sauce
2 1/2 cups grated cheddar or Monterrey Jack cheese or combination of both
|
1 small onion - chopped
1/2 cup black olives, shredded
4 green onions - chopped
|
|
1. Combine enchilada and tomato sauce and heat in medium saucepan.
2. Heat oil in medium skillet. With tongs carefully place 1 tortilla at a time in hot oil for 3 to 5 secs. until softened. Drain over skillet and immediately dip in hot enchilada sauce. Remove at once and place on plate.
3. Arrange 2/3 of cheese in a strip just below center of tortillas. Sprinkle with chopped onions and olives. Roll up tightly and place seam side down in shallow medium baking dish.
4. Preheat over 350°. When all enchiladas are prepared, cover with remaining sauce. Sprinkle with balance of cheese.
5. Bake 20 mins. till cheese melts and enchiladas are heated through. Garnish with green onions and olives. Serve at once.

TACO SALAD |
|
Los Amigos Tortilla Chips
1 cup of sour cream mixed with 4 tbs. of Los Amigos Picante Sauce
1 Cup of homemade chili
Shredded lettuce
2 chopped tomatoes
1/4 cup sliced black olives
|
1 avocado sliced
2 cups of grated cheese
|
|
1. Heat chili
2. Arrange lettuce on plates. Top with chopped tomatoes.
3. Top with 1/2 cup of chili, then cheese.
4. Place 1/4 cup of sour cream mixture on top.
5. Garnish top with avocado slices and olives.
6. Place Los Amigos tortilla chips around outside edge of salad. |

CHILAQUILES CASSEROLE |
|
12 Los Amigos Corn Tortillas torn in eights
1 Tbs. Los Amigos Picante Sauce (Salsa)
1Medium Onion chopped
1 2 Lb. can tomatoes drained and chopped
1 Tsp. oregano
|
Tsp. Salt
Vegetable oil for frying
1/2 C Grated parmesan cheese
2 1/2 C Grated mild cheddar or Jack Cheese
1pt Sour Cream
|
|
1. Fry Los Amigos tortillas lightly and drain on paper.
2. Make Sauce by wilting onion in hot oil; add tomatoes, Los Amigos Picante Sauce, oregano and salt. Cook covered 10 - 15 mins. in medium saucepan. Set aside.
3. Butter2 Qt. casserole and place alternate layers of Los Amigos tortillas, sauce, parmesan, jack cheese and sour cream. Reserve enough jack cheese for topping.
4. Bake 325° for 30 - 40 mins. During last 10 mins. sprinkle top with remaining jack cheese. |

CHALUPA |
|
2 Tbs. Los Amigos Picante Sauce
4 Los Amigos corn tortillas
1 16 oz. can of refried beans
1 Cup of homemade refried beans
2 cups grated cheese
cups cooked ground beef
|
2" vegetable oil in frying pan
Shredded lettuce
2 chopped tomatoes
1 avocado, sliced
1 cup of sour cream
Slice black olives
|
|
1. Fry Los Amigos tortillas one at a time in hot oil till crisp on both sides. Drain on paper towels.
2. Heat beans and spread about 1/4 cup in tortilla.
3. Sprinkle meat over beans. Sprinkle cheese over meat.
4. Top with lettuce, tomatoes and avocado slices.
5. Garnish with sour cream mixed with Los Amigos picante sauce and olives. |

CHIPS & SPREAD |
|
Serve Los Amigos Tortilla Chips with Los Amigos Picante Sauce and Cheese.
